JAPANESE SUNSET AIRS
1. Pour the juice into a rectangular, flat-bottomed bowl and sprinkle in soy lecithin. Using a hand blender, blend for 3 to 4 minutes, then let sit for 5 minutes. For different colour foams, repeat with any fruit juice.
2. In a cocktail shaker, shake together sake and syrup. Pour into a glass and top with blood orange foam.
