VODKA DICE & GAZPACHO

1. Peel and seed tomatoes and cucumber. Dice tomatoes and cut cucumber into a brunoise. Peel and dice pepper, dice onion and finely chop garlic. Seed watermelon and cut it into a brunoise as well. Reserve 2 tbs brunoised cucumber and 1 tbs brunoised watermelon for garnish.
2. Combine all ingredients in a blender until smooth and homogenous. Refrigerate for 1 hour. (Make vodka dice while you wait.)
3. Finely chop green onion. In a pot, bring vodka and sugar to a boil with 1 sachet Agar-agar, then remove from heat immediately. Stir in green onion and pour into a rectangular plastic container. Refrigerate for 30 minutes. Unmold and cut into a very small dice.
4. Divide vodka dice and gazpacho between serving spoons. top with brunoised cucumber and watermelon.
